Cream of Mushroom Soup

Made my first cream of mushroom soup, ever, this evening. It turned out delicious, in my humble opinion. First made an extract from dried porcini mushrooms in chardonnay (as in the wine…) and boiled water, then fried the plumped up porcini with sliced brown mushrooms in butter, olive oil, herbs de province and a few squirts of fresh lemon juice. I kept out a handful of mushrooms for texture and pulped the rest, then simmered it all with the porcini extract, cream cheese and milk, seasoned with white pepper, sea salt, fresh thyme and freshly grated lemon zest…
